This recipe is one I put together and my husband loves it! It takes very little time to prepare and there is always plenty left over for him to take in his lunch the next day. The original recipe calls for one portion of rice, however, if you want to stretch it to feed six people you just double the rice.
What You’ll Need
4-5 boneless chicken thighs
1( or 2) packages of Knorr Teriyaki Rice
1 package of frozen stir-fry Asian vegetables
Garlic, Salt, and Pepper to season Chicken
Instructions for cooking
Cut the chicken into small strips that are easy to eat and stir-fry. I season with the garlic, salt, and pepper and then let the meat marinate in a little soy sauce before cooking. Cook the chicken in a large skillet with a small amount of oil until done. Remove Chicken and let rest in a bowl while stir-frying frozen vegetables in the same skillet. Add a little more oil if needed.
While you are stir-frying the veggies you can cook the rice in the microwave. I have a glass microwavable dish I use. You mix the rice with water and butter according to package directions and cook in microwave for 12 minutes (uncovered).
Your veggies and rice will get done at the same time so just add the meat and veggies to the rice mixture and add more soy sauce to taste.
This dish makes a lot of food, especially if you use two packages of the teriyaki rice. You can also serve with egg rolls if you wish. Enjoy!
